New Coffee Shop Nearing Completion on Austin Highway

By Ron Aaron Eisenberg

Carryout/drive-thru coffee shops, like nail salons, seem to be everywhere.

Recently, I wrote about the new Dutch Bros Coffee that opened at 8222 Broadway St., between Taqueria Vallarta and the Car Wash. Soon, a 664-square-foot kiosk with drive-thru service will open at 1202 Austin Hwy, at Exeter Rd., across from Target and next to Las Palapas.

According to a filing with the state, the project will cost around $350,000.

Scooter’s Coffee was born in 1998, when co-founders Don and Linda Eckles opened their first drive-thru coffeehouse in Bellevue, Nebraska. They say their keys to success are to find a great location and stay committed to high-quality drinks, speed of service, and a BIG smile.
